A Couple Eggplants and Several Large Steakhouse Tomatoes
Last updated onThis past week has been more about tomatoes than anything else in the garden. I have been picking tons of cherry tomatoes, some Roma tomatoes that were made into sauce, and several steakhouse tomatoes that weigh about one pound or more each. I also picked the first two eggplants of the season along with some beans and a couple of cucumbers. Let’s take a look at all my garden produce harvested this week.
First off I have been slowly picking steakhouse tomatoes here and there and not much of a big harvest. This is a good thing because at a slow steady pace I can eat them each day without overfilling the fridge with nothing but steakhouse tomatoes.
This last harvest of steakhouse tomatoes was a little bit different. A few of my plants had plenty of ripe tomatoes that I could not ignore and leave on the plant. I had no other choice but to pick them because they were the perfect ripe color.
I picked six of them and they were very large sized tomatoes and weighed a total of five pounds. That is almost one pound per tomato. The largest one of the six weighed one and a half pounds; that is one meaty tomato.
On the other hand I have been picking cherry tomatoes a couple times per week at the moment. I like to wait for many of them to be ready for picking that is why I only stick to a couple of times per week for large harvests.
This past week I did get a large harvest for sure. Yesterday I picked over 250 cherry tomatoes just from one single harvest. I have about a half a dozen cherry tomato plants or so and they are producing plenty of cherry tomatoes that will last quite some time.
I’m not sure if I mentioned this, but I have picked a large amount of Roma tomatoes and they were all turned into sauce. All the Roma tomatoes that were harvested last week were turned into five quarts of delicious tomato sauce.
The first eggplants were picked this week as well. I picked the first one earlier in the week and then yesterday was a perfect time to pick the second one of the season. Each one is large enough to make one meal of eggplant Parmesan each and you can use homemade tomato sauce with it. I plan on having it tonight for a delicious meal.
