The First Two Eggplants Harvested

I just harvested the first two eggplants of the season today.  I think this is the earliest that I have ever harvested these vegetables.  Normally I get them in early September to late August at best.  This time I was able to pick them in mid-August which means that I can enjoy them much sooner.

I also harvested many more fruits and vegetables some of which I have been picking for quite awhile.  Cherry tomatoes, Roma tomatoes, cucumbers, and some peppers are also on the list for harvesting today.

Let’s first start off with the new harvest of eggplants.  I could have left them on the plant to mature a little bit more, but they were no longer growing and I didn’t want them to rot on the plant.  They weighed a total of three pounds and I have plenty still outside just waiting to be harvested.

Peppers were definitely ready today because many of them were quite large and they were not going to get any bigger.  I am very please with the size of my peppers and hopefully there are still many out there that will be near these sizes.

These are the two biggest that I picked this afternoon.

I collected a total of five peppers that were all of a decent size.  Here are all five of them.

Cherry tomatoes are just continuing to grow and ripen.  I am running out of room to put them and I still have plenty of them that I need to pick.  Luckily I love these tomatoes and I am certain that they will not go to waste.  Today I collected a total of 73 cherry tomatoes which is the most from one harvest this season.

I also got a few Roma tomatoes today as well.  I am looking forward to picking some of the large ones that are just starting to ripen on most of the plants.  For now I am picking a few at a time and I soon will use them to make my annual tomato sauce.

I also had a second harvest of corn yesterday.  I got about 17 ears of corn which means I have probably picked over half of what I plan on getting this season.  There are still some more out there, but only a few are big enough to call a harvest and the rest are too small to use.  So far I have been getting a good harvest from my corn stalks.

Lastly are six cucumbers that were harvested today.  I think my cucumbers are beginning to wind down because they are now growing smaller sized cucumbers.  I picked a few good sized ones today, but the vines right now only have small to medium sized vegetables.
