Many Vegetable Harvest are on The Way This Year

Right now there are many harvests that are going to be coming very soon now that most of my plants are producing flowers and fruit. I have so far been picking mostly my strawberries and kale. My strawberries are all done for the season and my kale continues to grow and as long as it produces more leaves I will harvest them. Some of the plants started to go to seed, but I was able to catch it time and cut off the bolting part of the plant. Let’s get into what I will be picking in the near future from my garden.

I just want to make a quick mention of my kale plants. A week ago I was able to fill two large five gallon buckets with kale leaves. This is probably the best and largest harvest of kale leaves that I have ever had from this garden. Instead of planting them in the fall I decided on planting them in the spring. It seems that planting in the spring has proven quite successful and will probably continue planting at this time going forward.

I have just started picking cucumbers this month and so far only three have been harvested and they were a great addition to any salad. I probably have about a dozen vines growing in the garden and most of them have at least one cucumber on them if not more. I hope to continue picking cucumbers from now until the end of the season.

Corn is also another vegetable that should be coming in the near future now that the stalks are starting to produce the silks from which corn cobs will come from. I would say these should be coming in a couple of weeks at the most. I also have a different type that is growing, but these will take a little bit longer and they are only now starting to get the tassels that produce the pollen.

Zucchini will start very soon because most of them are almost ready to pick. I have three plants and each one has at least one and one plant actually is producing two at the same time. There are a good size right now which can actually be picked today, but a will wait just a short time longer before it is time. I can’t wait to start harvesting my zucchini and begin making baked stuffed zucchini.

Tomatoes are also beginning to grow on my plants, but they are still green and I will be looking to pick them sometime in the month of August. Most of them are coming in including beefsteak, Roma, and cherry tomatoes. I can’t wait to slice through a beefsteak tomato and place it into a delicious sandwich or even a bacon, lettuce, and tomato.

I also wanted to mention one of my pumpkin vines is growing a female flower and actually opened up this morning. I am not quite sure if it has been pollinated, but I am sure I will find out real soon if that is the case. This is actually a little bit early to have pumpkins growing on the vine, but this plant has been growing very well.
